Potatoes: The Best Treasure Hunt Ever!

Have you ever harvested potatoes?

Embarrassingly, I must admit….I didn’t know what a potato plant looked like until this year (yes, I have lived in Idaho for 9 years!)

And, this is how the potatoes connect to the roots of the plant.

Look at little “hidden” one to the left

And the fun part is that once you dig up the plant, you get to feel around for the potatoes in the cool soil. It is strangely, and completely, satisfying. It’s the best treasure hunt ever!

And, for a little bonus….here is the easiest, most delicious potato salad ever:

Susan’s Super Easy Pesto Potato Salad

Steam potatoes, then cool in cold water. Peel and chop in to 1/2 inch to 1 inch cubes (your preference)

Add chopped green onions (maybe 6 -10)

Mix in pesto  + a little extra olive oil (Homemade or your favorite purchased pesto)

Perfect for parties. Keeps well at picnics (especially if you use homemade pesto w/o cheese). Tasty with a fried egg for breakfast.

  1. I didn’t know what a potato plant looked like either. After reading your post, I want to put my hands into cool soil and feel around for hidden treasures, too! That’s it. I’m planting potatoes next spring.
